Inspired Cucumber Salad

This recipe is adapted from ‘Oh she glows’ – Thai-Inspired Hydrating Cucumber Salad with Roasted Spiced Chickpeas

  • 1 medium cucumber (I used 2 small lebanese cucumbers)
  • 1 red pepper, diced
  • 1/4 cup sliced red onion (I kept the pieces larger as I really enjoy red onion)
  • 1/4 cup roughly chopped cilantro
  • Roasted spiced chickpeas (recipe follows)

 

Roasted chickpeas

  • 1.5 cups cooked chickpeas
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon turmeric

Preheat oven to 400F

Rinse and drain the chickpeas, and with a couple of pieces of paper towel, roll them around until they’re dry.

Add the chickpeas to a bowl and stir in the oil. Then add the rest of the spices.

Put the chickpeas on a baking sheet

Roast at 400F for 20 minutes. Stir the chickpeas up a bit, and roast them again for another 15-20 minutes. Keep an eye on them since ovens are different. Cool for 5 minutes and add them to your salad. They don’t stay crisp too long. You can also freeze them when they’re cool and reheat them in the oven for about 5 minutes to get them crispy again.

On to the salad!

Slice cucumbers down the middle lengthwise. Scoop out the seeds. Slice into half moons and toss into a bowl.

Add the cut up red pepper and red onion, and cilantro. Add the chick peas.

Ta da. Simple!

I left the dressing off of this recipe. I actually made the one from the original but it smelled really.. interesting, and decided that I would try it plain. It was quite delicious and the chickpeas make it a very filling (and spicy) salad.

 

 

 

Quinoa and Spinach Patties

Recipe is adapted from Skinnytaste.com – Quinoa and Spinach Patties

  • 1/4 cup uncooked quinoa
  • 1 egg, whisked, another egg for on top of the patty if you want
  •  feta cheese
  • 1/2 a leek, sliced thin
  • 1/2 tsp sea salt
  • 1 cup fresh spinach
  • 1 teaspoon olive oil

Rinse quinoa and cook according to instructions. Basically it cooks like rice. Let it cool when it is done.

In a large bowl, combine the quinoa, eggs, feta cheese, leek, and spinach. The mixture will be runny. Add oil to a non-stick skillet, and drop the mixture into the pan – almost exactly like you would a pancake. Cook the patties covered 5-8 minutes on each side, they’ll crisp right up and turn golden.

Serve with an egg on top however you like it but I prefer mine sunny side up so that the yolk breaks down into the patty. This dish tastes amazing and was a real surprise to me. Would highly recommend.

 

 

 

My Book Release #kindle #Canadian #author

A bit of non gaming news – been some time since I’ve had any but it does happen from time to time. Yesterday I released my first book, ‘Quiet Introspection‘ on amazon for kindle. There’s a physical version of the book that should be available (also on amazon) later today / tomorrow. As for what the book is about:

A collection of poetry that spans from 1995 to 2000 – most of it angst ridden with the typical trials and tribulations of a teenager growing up. First love, first heartbreak, and trying to come to the eventual realization that life does go on and we are stronger for our experiences.

Of course I know that means it won’t be everyone’s ideal book, but it’s pretty important to me. It is the first book I’ve managed to get to this stage and also won’t be the last. I have another book in the works that should be out for sale later this year or early next year (we’ll have to see, writing can be a fickle creature some times) that is part of the fantasy genre, and I hope people will be excited to read it. I’ve been writing for as long as I can remember but this is the first time I’ve ever really felt like an author. Maybe that’s a bit silly, after all I’m pretty much a nobody who simply enjoys writing and is looking for some sort of audience to share her works with. I’m still pretty proud.

Happy 7th Birthday MmoQuests

I purchased MmoQuests.com back in July 2006 and it’s seen some good years and some bad, but I always came back to writing here about my video game experiences. There have been over 2,300 posts in those 7 years, 62,896 spam comments since 2007, and 247,891 visits since 2010 (no idea why it didn’t count earlier than that). There are so many posts these days about ‘blogging and community‘ and ‘where did the MMO bloggers go‘ – well, this one is still right here. Still doing the same posts I’ve done for years now because I never went into this thinking I was doing anything more than writing about a hobby of mine, for myself. I love writing. In fact I have three other blogs besides this one, and although Nomadic Gamers doesn’t get a lot of traffic in the way of posts it’s still there. I don’t post very controversial topics but there are a few from the past. I also don’t get a lot of comments, but I never have – and I never ever let that stop me.

One thing I did do a few years ago was remove my blogroll from the right hand side column – and I want to change this and put it back. I had no reason for it other than the fact that it was a design choice I made at the time when I changed the theme around and just never added it back.

Anyhow, the point is – thank you. Every single person who has ever read this blog, ever supported me by clicking the donate button (it’s not free to host this massive blog for 7 years ya know), everyone who has put up with my rants, followed me from game to game, etc. I’ve met some very wonderful people by blogging here. I got a job writing for Beckett Massive Online Gamer (before they shut down of course) because of this blog. Will I be giving it up any time soon?

Most certainly not. Writing is just what I do.
